APRICOT CHICKEN 
1 (10 oz.) jar apricot preserves
1/4 c. lemon juice
2 tsp. soy sauce
1/2 tsp. salt
1 (2 1/2 to 3 lb.) chicken, cut up
1 c. dry bread crumbs
1/4 c. melted butter

Preheat oven to 350 degrees. In a shallow bowl, combine preserves, lemon juice, soy sauce and salt. Copat chicken with mixture. Roll in bread crumbs. Arrange chicken in a greased baking dish, drizzle with butter. Bake uncovered about 1 hour or until tender. Heat remaining apricot mixture, serve with chicken. Serves 4 to 6.
