FRUIT SOUP 
6 c. water
1/3 c. sugar
1/3 c. raisins
1/3 c. water
2 tbsp. fresh lemon juice
2 c. diced fresh fruit (apricots, pears, apples, peaches, plums)
1 tbsp. cornstarch

Put the water, lemon juice and sugar in a large stainless steel pot. Dice fruits into bite size pieces. Drop them into water as you cut them. Remove inedible parts of fruit. Add the raisins. Bring to a boil and cook on moderate heat for 1 hour. Mix the cornstarch with 1/3 cup water and add to boiling soup. Cook 2 to 3 minutes more, until soup thickens slightly. Remove from heat and let cool to room temperature. Then chill thoroughly in refrigerator. Serve very cold in nice glasses or decorative bowls.
