SQUASH BREAD 
1 c. granulated sugar
1/2 c. packed brown sugar
1 c. mashed, cooked squash
1/2 c. cooking oil
2 eggs
1/4 c. water
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. ginger
1/2 c. crushed pineapple
1/2 c. walnuts

In mixing bowl, combine granulated sugar, brown sugar, cooked squash, cooking oil and eggs; beat until well blended. Stir in water. Sift flour, baking soda, salt, nutmeg, cinnamon and ginger; add to squash mixture and mix well. Stir in pineapple and nuts.

Turn batter into a well-greased 9x5x3 inch loaf pan. Bake in 350 degree oven for 65 to 70 minutes, or until bread is done. Remove from pan; cool on rack. Wrap and store overnight, if desired. Makes 1 loaf.
