HONEY-BAKED CHICKEN 
1 (3 lb.) broiler-fryer, cut up and skinned
1/4 c. water
3 tbsp. finely chopped onion
3 tbsp. reduced-sodium soy sauce
2 tbsp. honey
2 cloves garlic, minced
1 tbsp. peeled, grated ginger
Vegetable cooking spray
3/4 c. thinly sliced green onions

Trim excess fat from chicken. Rinse chicken under cold, running water and pat dry. Place chicken in a 13x9x2 inch baking dish.

Combine water, onion, soy sauce, honey, garlic and ginger; stir well. Pour mixture over chicken; cover and marinate in refrigerator 1 hour, turning once.

Remove chicken from marinade; place marinade in a small saucepan. Bring to a boil; reduce heat, and simmer 5 minutes.

Place chicken on a rack in a roasting pan coated with cooking spray. Bake at 400 degrees for 35 minutes, turning and basting occasionally with reserved marinade. Sprinkle sliced green onions over chicken. Bake an additional 10 minutes or until chicken is tender. Serve warm. Yield: 6 servings (188 calories per serving).
