ZUCCHINI WALNUT BREAD 
1/2 c. walnuts
3 eggs
1 c. white sugar
1/2 c. brown sugar
3/4 c. vegetable oil
3 1/4 c. unbleached, unsifted flour
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 1/2 tsp. cinnamon
2 c. unpared zucchini, grated
3/4 c. raisins
1 tsp. vanilla

1. Beat together sugar, eggs, oil and vanilla.

2. Combine dry ingredients and add to zucchini.

3. Add raisins and walnuts (either or both).

4. Mix all together.

5. Grease 2 bread pan well and flour. Bake for 20 minutes at 350 degrees. Lower temperature to 250 degrees for 30 minutes or until top cracks. Check with toothpick.
