THE GREAT PUFFY PANCAKE | |
1/2 c. flour 1/2 c. milk 2 eggs, slightly beaten Pinch of nutmeg 4 tbsp. butter 2 tbsp. confectioners sugar Juice of 1/2 lemon Preheat oven to 425 degrees. Mix flour, eggs, milk and nutmeg together, leaving batter a bit lumpy. Melt the butter in a large frying pan and add the batter. Bake 15 to 20 minutes until golden brown. Sprinkle with confectioners sugar and return briefly to oven. Sprinkle with lemon juice. Cut into wedges. Serves 3. Double recipe for 6 and use two skillets. |
