SWEET PICKLE RELISH 
4 c. (960 mL) chopped cucumbers (about 4 med.)
2 c. (480 mL) chopped onions
1 chopped green pepper
1 chopped sweet red pepper
1/4 c. (60 mL) salt
3 1/2 c. (840 mL) sugar
2 c. (480 mL) cider vinegar
1 tbsp. (15 mL) celery seed
1 tbsp. (15 mL) mustard seed

Combine cucumbers, onions, green and red peppers in a large bowl; sprinkle with salt and cover with cold water. Let stand 2 hours. Drain thoroughly; press out excess liquid.

Combine sugar, vinegar and spices; heat to boiling. Add drained vegetables and simmer 10 minutes. Pack hot into hot half pint jars, leaving 1/4 inch (6 mm) head space. Adjust caps. Process 10 minutes in boiling water bath. Yield: about 8 half pints (1920 mL).
