WHOLE WHEAT BLUEBERRY MUFFINS 
1 c. less 1 tbsp. whole wheat flour
1 c. less 1 tbsp. flour
2 tsp. baking powder
1/2 tsp. salt
2 tbsp. corn oil
1/3 c. brown sugar
1 egg
1 c. skim milk
1 c. blueberries

Preheat oven to 400 degrees. Coat muffin tin with non-stick cooking spray. Combine all ingredients until moistened. Add blueberries and stir lightly. Bake 16-18 minutes or until muffins are lightly brown and firm.
