FUNNEL CAKES 
3 eggs (well beaten)
2 c. milk
4 c. sifted flour
1/3 c. sugar
1/2 tsp. salt
1 tbsp. baking powder
Fat or oil for deep frying
Powdered sugar

Beat eggs with milk and gradually beat in flour, sugar, salt and baking powder. Beat until very smooth. Holding the opening of a funnel closed, fill the funnel with the batter. Open the end of the funnel and let dough run out in a stream into deep hot 375 degree fat.

Move the funnel to make pattern, starting at the center of the pan and swirling batter outward in a circle. Fry 2 or 3 minutes or until brown. Drain on paper towel, then roll in powdered sugar.
