COCONUT OAT DROP COOKIES 
2 1/4 c. sifted flour
1 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
2 c. rolled oats, quick or reg., uncooked
1/2 c. shortening
1/2 c. butter
1 c. granulated sugar
1 c. brown sugar, packed
2 eggs
2 tsp. vanilla
1 c. chopped pecans
1 can (3 1/2 oz.) flaked coconut (2 c. loosely packed)

Sift together flour, salt, baking powder and soda. Stir in oats. Cream shortening and butter. Add sugars, eggs and vanilla; cream until fluffy. Stir in dry ingredients. Add pecans and coconut; mix well. Chill dough. Shape rounded teaspoons of dough into balls. Place 2 inches apart in greased baking sheet. Flatten with fork. Bake in moderate oven (350 degrees) until done and lightly browned, 12 to 15 minutes.
