FRIED RICE | |
2 eggs 1/2 c. frozen peas 1/2 c. Spam or canned ham, chopped Peanut oil 1 slice ginger, smashed 1 clove garlic, smashed 4 c. cooked rice, cooled 1 tbsp. scallions, chopped 2 tbsp. soy sauce Beat eggs and set aside. Thaw peas by running hot water over them for 30 seconds. Heat 1 tablespoon of oil in a pan over high heat until hazy. Add ginger and garlic and brown. Discard them from oil, then drain. Add ham or Spam and peas to oil. Stir-fry until meat is browned. Remove to a dish and set aside. Add 1 tablespoon of oil to pan and heat. Put in the rice and stir-fry briskly for 3 minutes. Add just enough oil to prevent sticking. Put in scallions and continue to stir-fry for 30 seconds. Move the rice to the sides of the pan to form a well in the middle of the pan. Put 1/2 tablespoon oil in well and heat for 30 seconds. Pour egg into well and scramble. When egg has cooked, mix into the rice. Add ham and pea mixture to rice. Sprinkle in soy sauce and mix thoroughly. |
