EGGPLANT MEATBALLS 
1 eggplant
2 eggs, beaten
1 sm. onion
1 green pepper
1 tsp. soy sauce
1 c. bread crumbs
Worcestershire sauce
Pepper
1/8 tsp. sage
Salt

Peel and cut eggplant into pieces. Cook in small amount of water. Add rest of ingredients except bread crumbs and mix. Use Worcestershire sauce, salt and pepper per individual taste. Form mix into balls. Roll in bread crumbs. Let stand several hours before frying in vegetable oil. Serve in tomato sauce.
