CHINESE CHICKEN SALAD 
1 pkg. Maifen noodles (use 1/2 pkg.)
1 head lettuce
4 breasts of chicken or 1 whole chicken
3 stalks green onions
1 pkg. sliced almonds
1/4 c. sesame seeds

Bake chicken and de-bone; cut into bite-size pieces. Chop onions and lettuce. Fry noodles in hot oil.

DRESSING:

4 tbsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
4 tbsp. rice vinegar
1/4 c. salad oil
Juice from sm. lemon
1 tsp. ginger

Mix in blender and refrigerate. Toss all salad ingredients with dressing just before serving.
