CINNAMON CUCUMBER RINGS 
1 gal. sliced jumbo cucumber rings (1/4 inch, peeled and remove insides)
Water
1 c. lime

MIXTURE #1:
1/2 c. vinegar
1 sm. bottle red or green cake coloring

MIXTURE #2:

1 1/2 c. vinegar
1 1/2 c. water
5 1/2 c. sugar
4 1/2 sticks cinnamon

DAY 1: Put 1 gallon cucumber rings in plastic container and cover with water and 1 cup lime. Soak 24 hours.

DAY 2: Drain and wash in cold water 3 times. Cover with cold water and add mixture #1. Bring to a boil and simmer 1 hour. Drain off. Heat mixture #2 and pour over cucumber rings. Let soak overnight in plastic container in refrigerator.

DAY 3: Drain syrup and save it. Bring to boil (mixture #2) and pour back over rings.

DAY 4: Repeat again next night.

DAY 5: Bring rings and syrup to boil. Pack in jars and seal.
