ENCHILADA CON QUESO | |
1 1/2 - 2 lbs. ground meat 1 onion 1 lg. bag shredded cheddar cheese Picante sauce 1 c. milk 1 can cream of chicken soup 1 lb. Velveeta 1 sm. jar pimientos 1/3 - 1/2 bell pepper, finely chopped 20 flour tortillas Lettuce (opt.) Tomato (opt.) Black olives (opt.) Brown the ground meat and saute the onion. Drain the grease. Add the cheddar cheese and stir together. Roll the meat, cheese and onion mixture in the flour tortillas. Place them in a 9"x13" pan. In the microwave, melt the milk, soup, Velveeta, pimientos and bell pepper. Pour the mixture over the rolled tortillas and bake at 350 degrees until bubbly, about 15 minutes. |
