BAKED STUFFED ZUCCHINI 
1 med. zucchini
1 qt. boiling water
1 egg, beaten
1 oz. American cheese, cut in 1/2 inch pieces
3 unsalted saltines, made into crumbs
Dash of salt and pepper
1 tsp. Parmesan cheese
Imitation bacon bits

Cook zucchini in boiling water, over high heat until fork tender. Rinse in cold water and cut in half lengthwise. Scoop out pulp, saving the shell. Chop pulp finely and add all other ingredients except Parmesan cheese and bacon bits. Spread pulp mixture evenly in shell and sprinkle with Parmesan cheese and bacon bits. Bake at 350 degrees for 15-20 minutes until cheese is melted. Makes 1 serving. 1 serving = 2 protein (meat), 1/2 bread serving and 2 vegetable servings.
