SWEET POTATO SOUFFLE 
2 c. mashed sweet potatoes
Juice and rind of 1 orange
Juice and rind of 1 lemon
1 whole egg, beat until creamy
1 c. sugar
1/2 tsp. ground allspice
1/2 tsp. ground cloves

Add sugar, then potatoes, 1 cup thin cream or milk, juice, spices, and butter the size of an egg. Whip until creamy. Turn into well buttered pan until firm. If desired, marshmallows may be added.
