POTATO PANCAKES 
1/4 c. milk
2 eggs
3 c. diced raw potatoes
1 sm. onion, quartered
3 tbsp. flour
1 tsp. salt
1/4 tsp. baking powder

Put all ingredients in blender in the order which they are listed. Cover and blend on high about 10 seconds. Do not over blend or potatoes will liquify! Pour small amounts onto a hot, greased fry pan. Fry until brown on both sides, turning once. Makes about 18 pancakes.
