MICROWAVE ENGLISH MUFFIN BREAD 
5 c. flour
1 tbsp. sugar
1/2 c. dark seedless raisins
2 pkg. dry yeast
1 tsp. salt
1 1/2 tsp. cinnamon
1/4 tsp. baking soda
2 c. milk
1/2 c. water

In large bowl, combine 3 cups of flour, raisins, yeast, sugar, salt, cinnamon and baking soda. Combine milk and water in saucepan and heat until very warm. Gradually add liquid to dry ingredients and beat well. Stir in remaining 2 cups flour to make stiff batter. Spoon into 2 well greased loaf pans. Let rise 45 minutes in a warm place. Microwave 1 loaf at a time on high for 7 minutes. Cool 5 minutes and slice and toast.

Since microwave ovens vary in power, you may need to adjust your cooking time.
