FUNNEL CAKES 
2 eggs
1 1/2 c. milk
2 c. flour
1/2 tsp. salt
2 tbsp. sugar
1 1/2 tsp. baking powder
Oil for frying
2 c. confectioners sugar

Beat eggs together with milk. Beat in mixture of flour, salt, sugar, and baking powder. Pour a small amount of batter into 375 degree oil. Deep fry until light brown, turning once. Drain cake on plate with a paper towel to absorb extra oil. Then sift confectioners sugar over hot cakes. Yields 6-8 cakes.
