STEWED OKRA AND TOMATOES | |
1 lb. fresh or frozen okra 3 tbsp. cooking oil 1 c. chopped onions 1 c. chopped green pepper 16 oz. can tomatoes 1 tsp. salt 1/4 tsp. Tabasco sauce 2 strips bacon, crisply fried Wash fresh okra, remove stems and cut okra into 1/2 inch rounds. Cook okra in 2 tablespoons cooking oil over medium - low heat in skillet, saute onions and green pepper in 1 tablespoon oil. Combine the cooked ingredients; add tomatoes, salt and Tabasco sauce. Mix; simmer 10 minutes. In serving dish, crumble bacon on top. Serves 4. |
