RHUBARB BARS 
3 c. rhubarb, diced
1 1/2 c. granulated sugar
2 tbsp. cornstarch
1/4 c. water
1 tsp. vanilla
1 1/2 c. uncooked oats
1 c. brown sugar, packed
1 1/2 c. flour
1/2 tsp. baking soda
1 c. butter
1/2 c. chopped nuts

Mix and cook until thickened, rhubarb, granulated sugar, cornstarch dissolved in water and vanilla. Mix until crumbly, oats, brown sugar, flour, soda, butter and nuts. Place 3/4 of crumbly mixture in 9x13 inch pan. Pour rhubarb mixture over this, then rest of the crumb mixture. Bake at 375 degrees for 30 to 35 minutes.
