CRISP PECAN COOKIES 
3/4 c. Crisco
1 c. chopped fine pecans
1 c. sugar
2 c. flour
1 tsp. vanilla
1 tsp. cinnamon
1 egg, separated

Cream sugar and Crisco. Add egg yolk, 1/2 cup pecans, vanilla, cinnamon and flour. You will have to use your hands after flour is added. Pat dough in well-greased cookie pan 1/4-inch deep. Brush with slightly beaten egg white and sprinkle the rest of pecans and pat down.

Bake 20 minutes in preheated 375°F oven. This recipe can be cut in squares when baked.
