CHOPPED BEEF RING MOLD 
2 lb. ground beef
3/4 c. butter
1/2 c. grated onion
2 c. soft bread crumbs
2 tsp. salt
2 tsp. paprika
1 1/2 tsp. prepared mustard
Few grains cayenne
1 tbsp. chopped parsley
1 tbsp. chopped chives

Mix well until thoroughly blended. Moisten with 2/3 cup tomato juice. Pack in generously buttered ring mold. Spread 1/3 cup catsup over top. Bake in hot oven 45 minutes or until delicately browned and meat shrinks from the sides of the ring mold. Unmold on heated platter. Fill center with creamed mushrooms. Serve with boiled potatoes and broiled tomato slices. Serves 10.
