CHOCOLATE-COVERED CHERRY COOKIES 
1 1/2 c. flour
1/2 c. cocoa powder
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda
1/2 c. butter
1 c. sugar
1 egg
1 1/2 tsp. vanilla
2 (10 oz.) jars maraschino cherries (about 48)
1 (6 oz.) pkg. semi-sweet chocolate chips
1/2 c. sweetened condensed milk

In a large bowl, mix flour, cocoa, salt, baking powder and soda. In a mixer bowl, beat together butter and sugar until fluffy. Add egg and vanilla and beat well. Gradually add dry ingredients and beat until well blended. Shape 1/2 tablespoon batter into balls; place on ungreased cookie sheet and press down center.

Drain cherries, reserve juice and place 1 cherry onto indentation in each cookie.

In small saucepan, combine chips and condensed milk. When chocolate is melted, add 4 teaspoons of cherry juice. Spoon about 1 teaspoon of mixture over each cherry. Bake at 350 degrees for 10 minutes.
