STIR FRY CHICKEN WITH ALMONDS 
5 boned chicken breasts
1/3 c. chicken broth
2 tbsp. soy sauce
4 tsp. cornstarch
2 tbsp. cooking oil
3/4 c. sliced almonds
6 green spring onions sliced into 1" pieces
1 (6 oz.) pkg. frozen pea pods, thawed
2 c. fresh mushrooms

Cut chicken into 1 inch pieces. Stir chicken broth and soy sauce and cornstarch together; set aside. In wok or skillet heat oil over high heat, add almonds and stir fry 1 minute or until brown. Remove almonds. Add chicken and stir fry 2-3 minutes.

Remove chicken. Add green onions and pea pods; stir fry 1 minute. Remove; add mushrooms and stir fry 1 minute. Stir broth mixture and add mushrooms. Cook and stir until bubbly. Stir in chicken and pea pod mixture. Cover and cook 1 minute. Stir in almonds. You can serve over rice if you care to, I do.
