MICROWAVE BROCCOLI OMELET 
1 1/2 c. frozen chopped broccoli
2 tbsp. water
1/3 c. shredded Cheddar cheese
4 eggs, separated
1/4 c. chopped onion
1/4 c. chopped green pepper
1/3 c. milk
1/4 c. shredded Cheddar
1/4 c. chopped ham
1 tsp. all-purpose flour
1/4 tsp. salt
1/8 tsp. black pepper
1 tbsp. butter

In 1 quart casserole combine broccoli and water. Cover. Microwave at high 4 to 6 minutes or until fork tender, stirring after half the cooking time. Drain. Stir in 1/3 cup cheese. Let stand, covered.

In medium bowl combine egg yolks, onion, green pepper, milk, flour, 1/4 cup cheese, ham and seasonings. Set aside.

In large bowl beat egg whites until stiff, but not dry. Fold beaten egg whites into yolk mixture until combined.

In 10 inch pie plate microwave butter at high 30 to 60 seconds or until melted. Tilt dish to coat.

Pour egg mixture into buttered dish. Reduce power to 50% (medium). Microwave 7 to 10 minutes or until set, rotating every 2 minutes and lifting edges with a spatula so uncooked portion spreads evenly. Top with broccoli; cut into serving wedges. Serves 4-6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
