LAZY DAY BEEF STEW | |
1-3 lbs. beef, cut into 1" cubes Flour Salt Pepper Any combination of veggies (onions, celery, potatoes, peas) Water Beef stew seasoning mix Coat beef cubes with seasoned flour. Brown in 2 to 3 tablespoons hot oil in large pot. Next add 6 cups water and beef stew seasoning mix. Cook for 2 to 3 hours until beef is tender. Chop up veggies. I usually use 6 to 8 potatoes, 8 to 10 carrots, 3 to 4 celery sticks, but it is your own preference. Add to beef, may need to add more water and cook until veggies are fork tender. Make a thick paste of flour and water (1/2 cup water and 3 to 4 tablespoons flour). Bring pot to boil, slowly add flour paste, stirring constantly until reaching desired consistency. Sometimes I add flour paste 2 or 3 times to get it thick enough. Serve when ready. |
