CINNAMON TEACAKES
1 c. soft butter
1 1/2 c. confectioners' sugar
2 1/4 c. flour
1 tsp. cinnamon
1/4 tsp. salt
1 tsp. vanilla extract

At medium speed, beat butter until light and fluffy. Then, at low speed, blend in 1/2 cup sugar, the flour, 1/2 teaspoon cinnamon, the salt, and vanilla extract (dough will be rather stiff). Chill 30 minutes or until stiff enough to handle easily.

Roll dough into 1 inch balls. Place balls 2 inches apart on greased cookie sheets. Bake at 400 degrees for 9 to 10 minutes or until delicately golden brown. On a waxed paper, combine remaining sugar and cinnamon. Roll hot cookies in this mixture. Cool.
