SAUSAGE STUFFED MUSHROOMS 
16 large mushrooms (1 lb.)
1/2 small onion, minced
1/2 lb. ground Italian sausage
1/4 c. red bell pepper
3 tbsp. Parmesan cheese
1/4 tsp. salt (optional)
1/4 tsp. pepper
2 tbsp. fine bread crumbs

Preheat oven to 350°F. Remove stems from mushrooms and chop fine. Sauté stems, onion, bell pepper and sausage over medium heat until crumbled and brown. Remove from heat and stir in remaining ingredients. Stuff and place on baking sheet.

Bake for 20 minutes or until tender.

Serves 4.
