FAUX CROQUETTES | |
Croquettes are balls of chopped meat which are deep fried. Well, these have no meat and they're not deep fried but you'll love them just the same. 2 c. low-fat cottage cheese 2 c. dried whole wheat bread crumbs 4 tbsp. pecans, coarsely chopped 1/4 tsp. paprika 1/2 c. mushrooms, chopped 1/4 c. green pepper, chopped 2 tbsp. onion, chopped 3/4 c. skim milk 2 egg whites, slightly beaten 1 c. corn flake crumbs 4 c. tomato sauce 1. Combine cottage cheese, bread crumbs, pecans, paprika, mushrooms, green pepper, onion, and enough skim milk to moisten, about 1/2 cup. 2. Divide into 20 equal portions and shape into ovals. 3. Lightly beat the egg whites with 1/4 cup milk. Place corn flake crumbs in a separate bowl. 4. Dip each croquette into the egg mixture and then into the corn flake crumbs. 5. Place croquettes on a non-stick baking sheet and bake at 325 degrees for 25 minutes. 6. Serve with hot tomato sauce. Yield: 20 croquettes. |
