LINGUINI WITH TOMATOES & BASIL | |
4 lg. ripe tomatoes, cut in 1/2 inch cubes 1 (1 lb.) Brie cheese, rind removed, torn in irregular sized pieces 1 c. cleaned fresh basil, cut up 3 garlic cloves, peeled, minced 1 c. plus 1 tbsp. olive oil 2 1/2 tsp. salt 1/2 tsp. fresh ground black pepper 1 1/2 lb. linguini (2 lbs.) Freshly grated Asiago cheese Combine all ingredients (except linguini and Asiago cheese) in large serving bowl. Prepare at least 2 hours before serving, set aside, covered at room temperature. Prepare linguini "Al Dente". Drain pasta and immediately toss with tomato sauce. Serve at once. Add desired amount of pepper and Asiago. |
