CHICKEN AND BROCCOLI CASSEROLE 
3 or 4 chicken breasts or 1 fryer
2 (10 oz.) pkgs. frozen broccoli
2 cans cream of chicken soup
1 c. mayonnaise
1 tsp. lemon juice
1/4 tsp. curry powder
1/2 c. grated Cheddar cheese
1 stick butter
1 sm. onion, chopped
1/4 c. celery, chopped
Salt and pepper

Boil chicken with celery, onion, salt and pepper. Cut into bite size pieces. Combine soup, mayonnaise, lemon juice, curry and cheese. Cook broccoli as instructed on side of package. Spray Pyrex dish, then layer broccoli, chicken and pour soup mixture over it. Mix melted butter with crushed Ritz crackers and sprinkle over top. Bake at 350 degrees for 30 minutes. Serves 8.
