ROAST DUCK GRAND MARNIER | |
1 cut-up duck salt and pepper 1/4 cup oil 2 cups orange juice 1/4 cup Grand Marnier 1 cup pitted and chopped apricots 1 cup pitted and chopped plums 2 tablespoons flour 2 tablespoons water Remove fat and trim meat. Season with salt and pepper. Brown in oil. Add orange juice and Grand Marnier; simmer until meat is tender. Add apricots and plums; simmer for 45 minutes. Mix flour with water into paste. Add to sauce and simmer until thick. Pour over buttered noodles. |
