PUMPKIN WHOOPIE PIES 
1 (1 lb.) box brown sugar
1 c. oil
2 eggs
2 c. cooked pumpkin
1 tsp. each cinnamon, cloves, ginger
1 tsp. baking soda
1 tsp. baking powder
2 tsp. vanilla
3 1/2 c. flour
1 egg white
2 tbsp. milk
2 c. confectioners sugar
3/4 c. shortening
2 tbsp. flour

Combine first 4 ingredients and spices in large bowl, mixing well. Add soda, baking powder, and 1 teaspoon vanilla, mixing well. Stir in flour 1 cup at a time, mixing well after each addition.

Drop by teaspoonfuls onto baking sheet. Bake at 350 degrees for 8-10 minutes or until cookies test done; cool. Mix egg white, 1 teaspoon vanilla, 2 tablespoons flour, milk, confectioners sugar, and shortening in medium bowl. Spread icing on half the cookies. Top with remaining cookies. Yields 36 servings.
