BEEF STUFFED PEPPERS 
4 lg. green peppers
1 med. onion, chopped
1 lb. ground lean beef
2 tsp. butter, melted
1 (8 oz.) can tomato sauce
1 can (8 3/4 oz.) whole kernel corn, drained
1/2 tsp. salt
1/2 c. (2 oz.) shredded cheddar cheese

Cut off tops of green peppers, remove centers and discard. Cook peppers in boiling water for 5 minutes. Drain and set aside. Saute onion in butter until tender, add ground beef, cook until browned. Drain well. Stir in remaining ingredients, except cheese.

Stuff peppers with meat mixture and place in an 8-inch square baking dish. Bake at 350 degrees for 15 minutes. Sprinkle tops with shredded cheese and bake 5 minutes longer.
