14 DAY PICKLES | |
2 gal. cucumbers 2 c. pickling salt 1 tbsp. powdered alum 5 pt. vinegar 8 c. sugar 1 tbsp. celery seed 6 cinnamon sticks Cut cucumbers in blocks. Put in a stone jar. Boil 1 gallon water. Add salt. Pour over cucumbers. Cover with cloth, let set 1 week on 8th day drain water off. Boil 1 gallon plain water. Pour over cucumbers, let set 24 hours. Drain off, boil 1 gallon water with heaping tablespoons alum, let set 24 hours, drain off. Pour 1 gallon boiling water, set 24 hours, drain. In a large pan mix vinegar, sugar, celery seed and cinnamon sticks. Heat to a boil and pour over cucumbers. Set 24 hours, drain and reheat this mixture to a boil. Pour over cucumbers. Set 24 hours. Put pickles in hot jars. Reheat mixture and pour over pickles and seal with 2 piece lids. |
