FRESH APPLE CAKE AND ICING 
3 c. diced cooking apples
1 c. vegetable oil
2 c. sugar
2 eggs
1 tsp. vanilla
2 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 1/2 tsp. apple pie spice
Icing - recipe below

In a large bowl, pour oil over diced apples. Add sugar; beat in eggs; add vanilla; stir. Fold in flour, salt, soda and spice. Mix well. Pour into a 13 x 9 x 2 inch baking dish. Bake at 350 degrees for 45 minutes to 1 hour. Remove to cooling rack. While cake is hot pour icing over top. Serve warm or cold.

ICING:

3/4 c. light brown sugar, packed
2 tbsp. milk
1/2 stick butter

Mix ingredients together; bring to a boil in a small saucepan. Pour boiling mixture over hot cake.
