MARTIN'S FAMOUS CHILI
1 large onion, diced
2 (15 oz. ea.) cans chili beans (hot or mild)
2 (15 oz. ea.) cans kidney beans
2 (15 oz. ea.) cans black beans
2 (15 oz. ea.) cans diced tomatoes (Hunts)
2 lb. ground beef
1 (8 oz.) pkg. sliced mushrooms
1 (4 oz.) box Chili Kit (Carrol Shelby)
1 (46 oz.) can tomato juice (Campbell's)
1 tsp. cayenne pepper
Creole seasoning, to taste (Tony's)

Cook ground beef in skillet on low heat, seasoning meat with creole seasoning. Dice onion.

Then in a large pot combine the beans, tomatoes, sliced mushrooms, onion and Chili Kit, mixing well. Add tomato juice, drain then add meat, bring to a boil then reduce heat and cook for 30 minutes.

Note: For those who like their chili a little more spicy you can add diced jalapenos and an additional teaspoon of cayenne pepper.

Enjoy!
