CAULIFLOWER SOUP 
5 c. water
2 1/2 c. cauliflower, cut up
1 c. carrots, chopped and shredded
1/2 c. celery, chopped
1 tsp. green pepper, chopped (optional)
1 - 1 1/2 c. milk
1/3 c. rice
2 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/2 tsp. paprika
Dash black pepper
1 tsp. grated onion
1 c. cold water

Put chopped vegetables and rice into water. Cook about 20 minutes. Melt butter and add flour, stirring till brown. Mix in 1 teaspoon grated onions, paprika, salt and pepper. Add 1 cup cold water to flour mixture and pour over vegetables. Mix well and then add 1 or 1 1/2 cups milk and simmer for 10 minutes. Serves 4.
