GREEK SALAD 
1 head chicory (curly endive)
1 head iceberg lettuce
2 cucumbers, peeled & sliced
2 tomatoes, cut in wedges, or 1 c. cherry tomatoes, halved
2 doz. Greek olives
2 green onions, chopped
2 tbsp. capers
4 oz. feta cheese, crumbled

DRESSING:

1/2 c. olive oil
3 tbsp. red wine vinegar
1/2 tsp. salt
1/2 tsp. dried oregano

Tear lettuce into pieces and mix with all salad ingredients except feta cheese. Sprinkle cheese on top of salad. At last minute toss with dressing as needed. Serves 4.
