EGGPLANT FRITTERS 
Pare and slice:

1 sm.-sized eggplant

Cook until tender in boiling water to cover.

Add:

1 tsp. vinegar

Drain the eggplant. Mash it.

Beat in:

1 egg
1/3 tsp. salt
3 tbsp. all-purpose flour
1/2 tsp. double-acting baking powder

Drop the batter from a spoon into deep fat heated to 365 degrees.
