RICE WITH CHICKEN AND CHEESE 
1 med. onion
1 tbsp. fat or oil
3 c. water or chicken broth
1 c. uncooked rice
1 1/2 c. cut up chicken, cooked
1 c. cheese, cut up
Salt and pepper to taste

Chop onion and cook in fat or oil until tender and lightly browned. Add water or chicken broth. Heat to boiling and add rice; lower heat. Cover and cook 25 minutes until rice is tender.

Add chicken and cheese. Cook over low heat until cheese melts. Add salt and pepper. Makes 6 servings, about 2/3 cup each.

Super easy, loved it! I put a half cup less water and add tons of seasoning to chicken but overall its a great meal.
