KEY LIME PIE 
1 baked 9-inch pie shell, cooled
2 1/4 c. canned sweetened condensed milk (Eagle Brand)
3 egg yolks
3/4 c. plus 2 tbsp. lime juice
4 tsp. grated lime rind
Whipped cream or Cool Whip

In medium bowl, beat egg yolks until thick and light yellow in color. Using a whisk, blend in condensed milk. Gradually add lime juice and lime rind, blending well. (Mixture thickens greatly when lime juice is added.) Spoon into pie shell and chill in refrigerator for 1 hour. Top with whipped cream or Cool Whip.
