SKILLET MEAL | |
1 lb. hamburger 1 c. soft bread crumbs 1 tsp. salt 1/8 tsp. pepper 2 c. peeled, sliced potatoes 1 c. canned vegetables (whole kernel corn, peas or green beans) 1 c. sliced onions 1 tsp. salt 1 c. whole, cooked tomatoes 1 c. tomato juice Combine hamburger, bread crumbs, 1 teaspoon salt and 1/8 teaspoon pepper. Fry in heavy skillet or electric skillet, stirring frequently until well browned. Cover hamburger with potatoes then canned vegetable(s), and onions. Sprinkle 1 teaspoon salt over onions, add whole tomatoes. Do not stir mixture but have vegetables in layers over meat. Add tomato juice. You may need to add a little more tomato juice. Cover and simmer 20 minutes or until vegetables are tender. Serve from skillet. |
