MEATBALL SOUP 
1 onion, minced
1 clove garlic, minced
1 1/4 c. oil
1 1/2 can tomato sauce
3 qt. beef stock
Sprig of mint leaves

ALBONDIGAS INGREDIENTS:

3/4 lb. ground beef
3/4 lb. ground pork
1/3 c. raw rice
1 1/3 tsp. salt
1/4 tsp. pepper
1 egg, slightly beaten

Fry minced onion and garlic in oil; add tomato sauce and beef stock. Heat to boiling point. Mix meat with rice, egg, and salt and pepper and shape into little balls. Drop into boiling broth. Cover tightly and cook 30 minutes. Add sprig of mint about 10 minutes before soup is done. Serves 6-8.
