STUFFED ZUCCHINI 
1 lb. ground beef
1 lg. onion
Mushrooms
2 cans tomato sauce or 1 can tomatoes and 1 can tomato or spaghetti sauce
1/2 c. bread crumbs

In fry pan, brown beef, onions and mushrooms. Drain. Cut about 6 zucchini in half. Scoop out seeds. Place zucchini "boats" in shallow glass baking pan. Heap meat mixture into "boats." Pour sauce in tomatoes over and around zucchini. Sprinkle with bread crumbs. I add extra mushrooms on top. Cover with aluminum foil, bake at 400 degrees for 45 minutes or until tender. I also add grated cheese the last 10 minutes to the top of zucchini boats.
