COTTAGE CHEESE PIE 
1 1/2 c. cottage cheese
4 tbsp. melted butter
1/2 c. sugar
1/4 tsp. salt
1 tbsp. flour
grated rind of 1 lemon
2 egg yolks (unbeaten)
1/2 c. raisins
1/2 c. chopped nuts

Combine in order given (mix well). Pour into unbaked pie shell.

Bake at 400°F for 10 minutes. Reduce temperature to 350°F and bake until filling is firm, about 30 minutes.

Fresh cherries or currants may be substituted for raisins if desired.
