MARY'S SPINACH SALAD 
2-3 bunches spinach
2 tbsp. butter
1/2-1 tsp. garlic juice
1 c. walnut pieces
1 orange

DRESSING:

1/3 c. sugar
1 tsp. salt
1 tsp. paprika
1/4 c. orange juice
2 1/2 tbsp. lemon juice
1 1/2 tbsp. vinegar
1 tsp. finely chopped onion
3/4 c. salad oil
Dash of fresh ground pepper

Wash and dry spinach. Tear in pieces and chill. Combine butter and garlic juice over medium heat, and add walnuts and brown, stirring continuously so the walnuts will not burn. Drain walnuts. Peel and slice the orange. Toss orange and walnut with spinach.

For the dressing, combine the ingredients in a jar and shake well or use a blender. Pour enough dressing to cover the salad, but not so much as to make the salad soggy. Serves 6-8.
