1 large potato
confectioner sugar (as much as you like)
peanut butter (as much as you like)

Microwave potato, peel and mash. Add sugar to make stiff dough, then roll out on wax paper. Sprinkle with sugar, put layer of peanut butter and roll up like a jelly roll. Chill and slice.
